Most people who buy harissa paste for the first time use it the same way twice and then forget it is in the fridge. That is almost entirely a labelling problem. Harissa is sold as a condiment, something you squeeze onto the side of a plate, and that framing undersells it by about 90%.

Genuine Tunisian harissa is a base ingredient. It belongs in the pan, the marinade, the dressing, the dough. It is one of the most versatile things in a Mediterranean pantry, and once you start using it properly, you will find it difficult to cook without.

Here are 10 ways to use harissa paste that go well beyond the condiment bowl.

1. The Marinade That Changes Everything

Mix two tablespoons of harissa paste with one tablespoon of extra virgin olive oil, a crushed garlic clove, and a squeeze of lemon. Rub it over chicken thighs, lamb chops, or a whole fish. Leave it for at least two hours overnight if you have the time.

The dried chillies in harissa do not just add heat. They create a crust under the grill that seals in moisture and builds the kind of flavour that a spice rub alone cannot achieve. This is the single most impactful thing you can do with harissa if you are new to it.

2. Stirred Into Yoghurt

One tablespoon of harissa paste stirred into 150g of full-fat yoghurt with a pinch of salt and a drizzle of olive oil. That is it. You now have a sauce that works with grilled vegetables, as a dip for flatbreads, alongside falafel, or spooned over a grain bowl.

The yoghurt mellows the heat and adds a tang that balances the smokiness of the harissa. If you make nothing else from this list, make this.

3. Shakshuka Base

The most common shakshuka recipe starts with tomatoes, garlic, and cumin. The Tunisian version starts with harissa paste. Add a heaped tablespoon of olive oil before anything else. Let it sizzle for 60 seconds until fragrant, then build the tomato base on top of it.

The result is a shakshuka with significantly more depth and a background heat that runs through the entire dish rather than sitting on the surface. It also makes the sauce a darker, richer red.

4. Roasted Vegetables

Coat the cauliflower, sweet potato, carrots, or aubergine with a mixture of harissa paste and olive oil before roasting. Allow for one tablespoon of harissa per 500g of vegetables, mixed with two tablespoons of extra virgin olive oil.

The harissa caramelises in the oven, creating a slightly sticky, deeply spiced crust. Finish with a handful of fresh coriander and a spoonful of the yoghurt sauce from tip two. This is a complete dish.

5. Pasta Sauce

Fry a finely chopped onion in olive oil until soft. Add one tablespoon of harissa paste and cook for two minutes. Add a 400g tin of chopped tomatoes, season, and simmer for 15 minutes. Finish with a handful of torn basil or flat-leaf parsley.

It sounds simple because it is. The harissa replaces the chilli flakes that most pasta arrabbiata recipes call for, but brings caraway and coriander with it, giving the sauce a complexity that chilli flakes alone cannot deliver. Works well with rigatoni or bucatini.

6. Soup and Stew: Added at the End

Do not cook harissa paste for a long braise from the beginning. Add it in the final five minutes, stirred directly into the liquid. This preserves the volatile aromatic compounds that give harissa its characteristic aroma.

A spoonful into a chickpea and tomato stew. A tablespoon into a lamb and white bean braise. Half a teaspoon into a lentil soup just before serving. In each case, the harissa acts as a final seasoning, lifting the dish with heat, smoke, and fragrance in a way that salt and pepper alone cannot.

7. Flatbreads and Toast

Spread harissa paste directly onto warm flatbreads, pita, khobz, or a simple sourdough slice and top with a soft-boiled egg, sliced avocado, or crumbled feta. Drizzle with olive oil. This is a proper Mediterranean breakfast in under five minutes.

You can also mix harissa into labneh strained yoghurt for a spread that works as a starter or a snack. Two tablespoons of harissa per 200g of labneh, served with good bread and a pool of EVOO.

8. Compound Butter

Soften 100g of unsalted butter. Mix in one tablespoon of harissa paste, a teaspoon of lemon zest, and a pinch of sea salt. Roll into a log using cling film and refrigerate.

Slice a round of harissa butter over a grilled steak as it rests. Place it on top of a whole roasted chicken in the last five minutes of cooking. Melt it over sweetcorn. It keeps in the freezer for up to three months and makes the simplest protein feel considered.

9. Salad Dressing

Whisk one teaspoon of harissa paste with three tablespoons of extra virgin olive oil, one tablespoon of red wine vinegar, half a teaspoon of honey, and a pinch of salt. Taste and adjust.

This works especially well on robust salads, roasted pepper and chickpea, Nicoise, or a warm lentil salad with goat’s cheese. The harissa adds warmth and complexity that turns a dressing into something worth making again.

10. Pizza and Flatbread Base

Replace tomato sauce with harissa paste thinned with a little olive oil. Spread it across a pizza base or flatbread and top with mozzarella, roasted peppers, and olives. Add sliced merguez if you have it.

The harissa base creates a completely different kind of pizza, smokier, hotter, with a depth of flavour that a standard tomato sauce cannot match. It is also one of the fastest weeknight meals you can make from a well-stocked pantry.

A Note on Quality

Everything above depends on using Tunisian harissa that is properly made from whole dried chillies, garlic, caraway, coriander, and genuine extra-virgin olive oil. The commercial approximations sold in most UAE supermarkets are diluted, stabilised, and mild, and will produce a diluted, stabilised, mild result.
